Green Velvet Cupcakes for
St Patricks Day
- 225g Soft butter
- 225g Caster Sugar
- 195g Spelt Wheat White Flour
- 1tsp baking powder
- 3 free range eggs
- 1tsp vanilla extract
- 30g Cocoa powder
- 240g Butter milk
- 1tsp white wine vinegar
- a few drops of Green food colouring (gel colouring is the best)
- 100g Full Fat cream Cheese
- 100g Soft butter
- 400g Icing Sugar
- 1tsp lemon juice
- Green sparkles to decorate
Prepare 2 12 hole cupcake tins with 18 cupcake case. Preheat the oven to 180degrees or 160 Fan or gas mark 4
Cream the butter and sugar together until light and fluffy and a pale cream colour. Add the green food colouring a little at a time until you get the desired colour
Whisk the eggs in a separate bowl and add them gradually to the butter and eggs along with the sifted flour, baking powder and cocoa powder. Add the butter milk and vinegar. Fold all the ingredients together to form a light mixture.
Spoon the ingredients into the prepared cup cake cases, fill 2/3 full and bake in the centre of the oven for 20/25 mins until a skewer comes out clean.
Leave to cool completely and prepare the icing.
Beat together the cream cheese and butter and gradually add the icing (on low speed to prevent the icing going everywhere!!!!) add the lemon juice. Beat until soft and fluffy.
Spoon into a piping bag with a plain nozzle and ice in a circular motion. Have fun with it!!!
