Having the children home all day can feel like you are being eaten out of house and home!!! Sick of the same old sandwiches why not try the humble jacket potato
The fluffy jacket potato is perfect for lunch. Crispy skinned, jacket potatoes are a budget friendly way to feed everyone and fuel the body well to keep their energy levels going till dinner time.
Wash the jacket potato and cover in a little olive oil and place in the oven 220 degrees C, for 45 mins to 1 hour until the skin is crisp and the inside is soft. Make a cross on the centre and you are ready to serve.
You can serve them with cheese or tuna or why not try these homemade baked beans, for the ultimate energy to keep those little brains alert.
Perfect Homemade Baked Beans
Serves 4 (good to Freeze)
- 2tbsp Butter
- 1 red onion
- salt and pepper
- 2 cloves of Garlic
- 1tsp smoked paprika
- 400g passata
- 2 400g tin of butter cannellini beans, drained and rinsed
- 1tbsp barbecue sauce
- splash of red wine vinegar
Melt 1 tbsp. butter in a pan, slice finely the onion and add with a good pinch of salt. Let the onions sweat for 5 minutes until soft and sweet. stir in the garlic and paprika.
Pour in the passata and add the beans, stir everything together and simmer until the sauce thickens.
Stir in the barbecue sauce, and the vinegar and the remaining butter melt through the beans. Season with salt and pepper. When ready serve with your gorgeous buttered jacket potato.
